There are expectations of Napa Valley Cabernet. A specific set of “RULES” must be followed. The grapes must be picked at a certain sugar range, fermented at the exact temperature for a certain amount of time, and rest several months in the perfect combination of oak barrels. We follow all of the rules, except we break the one rule most wineries won’t… the price.
WINEMAKING: The grapes for the 2010 Rule Cabernet were sourced from five appellations throughout the Napa Valley. The grapes were meticulously sorted, fermented and then aged in 100% French oak for 18 months before being blended with small lots of Merlot, Cabernet Franc and Petite Verdot.
TASTING NOTES: Strawberry, Currant, Vanilla and Tobacco are ingrained in the initial aromas of this Cabernet. The palate evolves into a lush combination of Red Vines, black cherry and cigar box. This wine has aging potential but you will not be disappointed if enjoyed sooner than later.
FOOD PAIRINGS: The Rule Cabernet pairs well with beef, duck and distinctive cheeses, such as Camembert, Danish Blue and Grafton Village cheddar.
